Couldn't Be Simpler Roasted Tomato Soup

I was planning on making a salad for lunch, but it is seriously hailing and blustery outside. (That's Wisconsin in the springtime...) So, I decided I needed a warm, cozy soup instead. I came up with this Roasted Tomato Soup using what I had on hand. The tomatoes and spinach give it a nice fresh taste. Seriously couldn't be any easier!

Here's What You Need:
12oz Three Cheese Red Sauce (Barilla, for example)
1 cup of chopped Roma tomatoes
Italian seasoning
Extra Virgin Olive Oil
Baby Spinach
Fresh pepper
1/4 fat free half and half


Here's What You Do:
Preheat the oven to broil. Toss tomatoes with about 2 TBS of olive oil. Season with Italian seasoning liberally. Simmer the red sauce over medium high heat. Once it starts bubbling, lower it to medium. Broil the tomatoes for 10-12 minutes, turning occassionally. Add the tomatoes to the red sauce and return to simmer. Stir in the half and half until warmed through. Spoon into indvidual serving bowls and top with a handful of baby spinach cut into tiny strips with kitchen shears. Season with fresh pepper. And there you have it-- Warm soup on a cold day!

Kid Tip:
This one is easy-Serve with grilled cheese. What kid doesn't love to "dunk it"?! For the spinach, you can add it before serving so it gets 'melted' into the soup and disguises itself.
