SKINNY Caesar

I don't know about you, but in the summer I could eat Caesar salads every day. I just love the combination of salty, crunchy and creamy. Unfortunately, the creamy usually comes from lots of mayo. So, I created this Skinny Caesar using a dressing that doesn't include mayo. I was so excited when it was so good that I made it again the next day. Don't be afraid of the anchovies. Most people say they hate anchovies not realizing that they are in most caesar dressings. Just close your eyes as you drop them into the blender!

Here's What You Need:
1 large garlic clove, chopped
2 tsp Dijon mustard
Juice of 1/2 lemon
1/4 cup extra virgin olive oil
1 tsp worcestershire
4 anchovies, rinsed
Croutons*
Grilled chicken tenderloins*
Parmesan
Salt and pepper
4 cups chopped romaine


Here's What You Do:
Combine worcestershire, dijon, anchovies, lemon, and garlic in the blender, slowly adding the extra virgin olive oil. Mix with the chopped romaine and top with croutons, grilled chicken and parmesan. Generously season with salt and pepper.
*I marinated the chicken in low-fat italian dressing. I also made homemade croutons, which were delicious. Cut up hearty bread (I used left over whole wheat buns) and toss with olive oil and seasoning. Bake in a 400 degree oven for 8-10 minutes, turning at least once.

Kid Tip:

This was actually pretty funny! I thought that if I made little "flags" my three year old would be excited to eat this. So, I threaded a piece of chicken followed by a piece of romaine on to little toothpicks and put them on this plate alongside a big bunch of fruit. Well, he ate all the chicken and left a big pile of the lettuce! Next time, I will try something more kid friendly alongside the chicken on the "flags", like grap tomatoes, for example.


Sit on the patio with a Skinny Caesar and a 123 calorie glass of wine!
