A whole meal...in one hand

I am constantly on the go, as I am sure most of you are. Because of this, I eat like three granola bars a day. I tried something new last week though that I am pretty excited about. A wrap, wrapped up to go, creating a meal.. in one hand!

Here's What You Need: Whole wheat tortilla
1/2 TBS of light mayo
Dried basil
1 TBS of sharp flavored cheese*
1 piece of deli meat
1/3 cup julienned cucumbers
1/2 of a roma tomatoe, sliced
handful of baby spinach leaves, chopped
salt and pepper
plastic wrap


Here's What You Do:Spread on the mayo and sprinkle with basil. Top with the other ingredients and add salt and pepper. Fold in bottom fold over tightly and then roll in a piece of plastic wrap tightly. Peel down the wrapper as you eat. There you have it...a meal in one  hand!

Kid Tip:
Kids love things they can eat with their hands, and the wrapper on this is remniscent of a child favorite-string cheese! You can vary the ingredients to items they like. You can even make a sweet version using peanut butter, apples, raisins, and honey.


*I  used Rembrandt's Aged Gouda in mine, but try any of your favorite sharp flavored cheeses that pack a bunch without needing much!
