This recipe turned out great; however, this night was not the best. I was five minutes in to cutting the pineapple when my little guy starts calling my name from the balcony, followed by crying. Oh no! I ran out there and he told me he fell down (because he was standing on the back of his toy dump druck...). I went to give him a hug and saw that blood was gushing from his head. S***t! Luckily Andy was in town and rushed home to pick him up. Lots of tears, three stiches, and two popsicles later my three year old was patched up and smiling and we resumed dinner. I think I am offically paranoid now and want him to wear a helmet at all times...
We had Grilled Shrimp with Pineapple Salsa more as an appetizer, but it can easily be doubled to be an entree and would be great with black beans and rice. It also would be good with flank steak, grilled chicken, or with quesadillas. Buen Provecho!
Here's What You Need:
1/2lb of medium shrimp, peeled
1 tsp of seasoning (I used Penzey's Jerk seasoning)
1/2 tsp minced garlic
1 cup of pineapple
1/4-1/2 purple onion, diced
Handful of cilantro, chopped
Sea salt
1/2 of a jalapeno, deseeded (optional)
Here's What You Do:
Add the garlic and seasoning to the shrimp and let marinate for at least 30 minutes. (Or do it in the morning and let it marinate all day) Mix the pineapple, cilantro, jalapeno, and onion. Season to taste with salt and set aside. Grill the shrimp two minutes per side on medium-high. (I used a grill pan, but you can use the "real grill" too.) Serve the shrimp with the salsa on top.
Kid Tip:
I put plain pineapple and the shrimp on a plate for my three year old. He was actually super excited about the shrimp. Unfortunately, it was too spicy since I used jerk seasoning. Next time if I make this with the kids in mind, I will use something less spicy since the salsa adds a great spice anyway.
