Perfect for a Weeknight-Basil Ginger Stirfry

My boys are great at self entertaining. They go out onto the balcony that is attached to our kitchen while I make dinner and ride their little bikes, pour water over random things, and pretend to water ski. Their imaginations amaze me. However, if my dinners take too long they sometimes slip back into the house where mischief can easily be had. We have seen far too many toothbrushes dunked into the toilet for this very reason! So when my husband is traveling and I don't have a wingman it is mission critical to make something fast. I came up with this Basil Ginger Stirfry for that very reason-It's fast as heck. (It tastes good too-bonus!)

Here's What You Need:
1lb pork cut into strips*
1/3 cup low-sodium soy
1 pouch of Uncle Ben's Ready Rice (Basmati flavored)
Vegetable oil
Sesame oil
1tsp minced garlic
2" approximately of finely chopped fresh ginger
Big handful of chopped basil


Here's What You Do:
Marinate the pork in soy sauce, preferably overnight or at least 15 minutes. Make the rice in the microwave according to the package directions and set aside.  Heat a capful of oil over medium high heat until almost smoking. Add pork and stirfry for approximately four minutes, tossing occassionally. Remove pork and set aside. Add a capful of sesame oil to the pan that is still hot and add ginger and garlic. Stir quickly heating for about a minute or two, being careful not to let the garlic burn. Add in the rice, basil, and cooked pork and toss so everything is mixed. Serve with soy sauce to pass.
*I bought the pork that was already cut for stirfry to make this quicker. You can also easily sub in chicken here, just be sure to cook a bit longer until cooked through.


Kid Tip:
To be honest I was a bit worried that my kids wouldn't eat this one, but I had my three year old help pull the basil from the plant and I think that peaked his interest. Also, he is always excited to try his hand at chopsticks. If your kids do not like their food mixed, you can serve them the rice and pork separately.

  1. This is a great one-pot meal idea :) I have got some fresh basil and chicken at home. And ginger and garlic are always in abundance in the INdian refrigerator :D so this sounds like my dinner plan for tonight!
