Skinny Italian Grilled Cheese

I work from home and my office is in the basement. I sometimes go a little stir crazy and find I'm talking to myself more than a normal person really should. So, going up to my sunny kitchen to make myself lunch is a wonderful break. In the summertime, I grab a cooking magazine and go sit  out on the deck in the sunshine enjoying whatever I made. 30 minutes later I am back at my buzzing email, but I always feel refreshed and energized by those little breaks. I made this last week for lunch and just loved the combination. I know I will make this Skinny Italian Grilled Cheese again, as it is something that everyone in my family would eat (of course minus the tomatoes!)

Here's What You Need: (This makes one sandwich so adjust accordingly)

2 pieces of hearty whole grain bread
Pesto (homemade or storebought works great)

Ripe, juicy tomato
1-1.5 slices low-fat provolone
extra virgin olive oil
salt and pepper


Here's What You Do:
Spread pesto on each piece of bread. Top with the cheese, followed by the tomato. Sprinkle with salt and pepper. Put sandwich together. Brush olive oil on the top and bottom of  the sandwich. Put in the panini maker for 4-5 minutes or make in a pan like a traditional grilled cheese.


Kid Tip:
I always think grilled cheese is a great place to "sneak"  in veggies. Substitute the tomatoes here for a few pieces of baby spinach. You can also add some lean meat like turkey or ham.
