Some of my best recipes have truly happened by accident. This recipe was definitely one of those accidents! I was planning on making guacamole to go along with the Carne Asada I had from Trader Joe's (Great thing to have in the freezer for a desperation dinner by the way). When I cut into the avocadoes they were both completely nasty--probably what I get for buying slimcados. Anyway...since my mom was already in route to my house for dinner I had to think of something quick. My fridge was stock full of produce from the farmers market, which inspired this Summertime! Pico de Gallo. The cool freshness of it was perfect with the spicy carne asada.
The next day, I layered a piece of hearty bread with pesto, topped it with this pico de gallo and a little bit of low fat mozzarella and baked it at 375 for about 12 minutes. Delicious lunch! This salsa would also be good with grilled shrimp or chicken or simply with pita chips. Enjoy these flavors of summertime that sadly is coming to an end...
Here's What You Need:
1 cucumber, diced
2 1/2 cups of tomatoes, diced
1 heaping tsp of minced garlic
1-2 handfuls of cilantro, chopped
1 TBS mint, chopped
1/2 tsp salt
Juice of one lime
Here's What You Do:
Mix everything together. Yep...easy as that!
Kid Tip:
I know I have mentioned this before, but my three year old loves "nachos", so I piled this veggie loaded salsa onto whole grain chips, topped with cheese, and microwaved for 45 seconds.
