Sesame Stick Fried Chicken (Did I mention it's baked?!)

I can't lie. I love fried chicken. When I lived in Korea there was this amazing little "restaurant" that had the best fried chicken ever that they served with equally great french fries. I think I ate there at least once a week. I could do that then. I was 25 and I walked two miles to work and back. Not to mention my classroom was on the top floor of our school and I walked up and down the stairs several times a day. Now I live the typical suburban lifestyle that requires very little walking, which is pretty sad, actually. Anyway...it means I certainly can't eat fried chicken once a week- more like once  a year. So, baked "fried" chicken it is! Since we love sesame sticks at our house, I came up with this Sesame Stick (Baked) Fried Chicken. It's not the real deal, but it's good...

Here's What You Need:
2 cups sesame sticks
60z plain ff yogurt (one little cup)
1-2 TBS dijon
Cayenne, just a dash
salt and pepper
extra virgin olive oil
1.5-2 lbs of chicken*


Here's What You Do:
Preheat the oven to 350. Pulse the sesame sticks in the food processor and then pour onto a wide plate. Mix the yogurt, cayenne, and dijon together in a big plastic bag, add the chicken to coat. Dredge the yogurt covered chicken into the sesame sticks, pressing to make them stick. .Add the chicken to a non-stick cooking spray coating baking pan and cover with foil. Bake for 25 minutes. Uncover and drizzle with extra virgin oil and bake for 10 minutes more. Season liberally with salt and pepper.

*If you are using anthing besides boneless chicken breasts you will  need to bake for at least ten minutes longer to be sure it is cooked through. Check!


Kid Tip:
Depending on the cut of chicken you used, you can have your kids eat the chicken with their hands, which always makes food more fun. If you used chicken breasts, cut it into little pieces and add a little sauce for dipping like organic ketchup or honey mustard.

  3. Yep the regular ones, but I think you could really change the flavor of the chicken by using the sweet ones. So many possibilities! ;)

  4. Just out of curiousity. Could something like egg or another substance be used in place of the yogurt to coat the chicken?

  5. Absolutely! Though you can't really taste the yogurt so you may want to give it a try :)
