Zucchini Crescents

On weeks when Andy is traveling alot, my enthusiasm for cooking and grocery shopping wanes dramatically. I mean, how can I get excited about cooking for just my boys when I know that 50% of my hard work will end  up on the ground?! (sigh) So, when we showed up at the farmers market Wednesday at 4:30 our refrigerator was primarily condiments and I didn't have a single idea for dinner. Then I saw these great ball shaped zucchini. I picked up three and headed home. My Zucchini Crescents turned out so great( if I can toot my own horn a bit...). They are creamy and buttery while being light at the same time. They're the perfect size for little hands and hide a beautiful piece of green vegetable. Voila!

Here's What You Need:
*Package of crescent rolls
Large zucchini cut into 1/2 moon shapes
Seasoning (I used Penzey's Greek Seasoning)
Flavored feta

Non-stick spray (preferably organic)
Extra virgin olive oil

Here's What You Do:Heat 1-2 tsps of olive oil in a grill pan over medium heat and add zuchini. Cook until the start to soften, turning at least once (about 5 minutes).Spray baking sheet with non-stick spray and then lay out the crescent roll dough. Fill each one with a piece of zucchini and 1 tsp of feta. Close and bake according to package directions. (10-11 minutes)
*I used a mini package, which made about 5, so you may want to buy the regular size. I also think this would be terrific with eggplant and goat cheese!


Kid Tip:The beauty of finger food is that kids generally like it because it is fun. But, if your kids are super slueths and will notice the green peaking out, you may want to cover the zuchini entirely by the dough. If you can just get them to take a bite, they will like it!
