For some reason I am on a breakfast kick. I had some left over french bread and berries, so I came up with this Easy Vanilla Baked French Toast. I love french toast, but it is kind of a pain to make for more than a couple of people. Baking it eliminates this problem, as you can make all of the pieces at once. --Not to mention it makes it a whole lot skinnier! (This was even good the next day microwaved for 55 seconds.)
Here's What You Need:
6-8 french bread pieces, sliced thick
4 eggs whisked
1 cup skim milk
1/2-1 tsp vanilla
1/2 tsp cinnamon plus extra
1/4 tsp nutmeg
good dash of salt
100% maple syrup
fresh berries (optional)
Here's What You Do:
Preheat the oven to 425 and then line a baking sheet with parchment or spray with non-stick spray. Whisk milk into the eggs and then stir in the seasonings, including the salt. Dip each piece of bread in the egg mixture, letting any extra mixture drip off. Line up the pieces on the baking sheet and bake for about 15 minutes. (Keep a good eye on it as you don't want it to burn) Season each piece with an extra dash of cinnamon and drizzle with maple syrup. Top with fresh berries.
*Note: If I had more time, I think I would soak the bread for a bit before adding it to the baking sheet. I also would warm up the syrup adding in some berries to really infuse the berry flavor.
Kid Tip:
What kid doesn't love french toast!? To make it friendly for little hands, cut into "strips". Have lots of napkins handy!
