Five Minute Dinner! Mediterranean Flat Bread

I know so many moms struggle with the decision to go back to work after having children. I can completely understand why. I really knew all along I was going back-I had spent seven years growing a business I loved from the ground up. I also knew I had the incredible gift of flexibility-Being able to stay home when my little ones are sick or to sneak out early when I just simply miss them. This school year, however, has been a rough one. Where I used to rush down to my office excited for what the day would bring, I have been now trudging down there with a sense of dread, wondering what the next fire will be. Thursday was an especially dreadful work day. At the end of the day, as I snuggled on the couch with my little guys and my three year old looked at me and said, "I like you mommy.I really like you mommy." I was reminded of what is truly important in life....

I also was happy to come up with this Mediterranean Flat Bread, which was truly done in five minutes. (About all the patience I had left!) It's good enough that I will make it again for dinner or even as an easy appetizer.

Here's What You Need: (Serves 2 so double accordingly)

1 piece of naan flatbread (I bought Archer Farms from Target)
2-3 TBS of pesto*
2-3 TBS of flavored feta
Extra virgin olive oil
1/2 of a ripe tomatoe, sliced
Handful of baby spinach cut into strips
Seasoning (I used Penzey's Greek Seasoning)
S+P

Here's What You Do:Preheat the oven to 350. Spread the pesto evenly on the bread. Sprinkle the feta around and top with the tomatoes. Season liberally with your favorite seasoning, like Greek. Drizzle very lightly with olive oil*. Bake for 3 minutes. Top with a handful of spinach strips and season with salt and pepper.

*I used leftover Giada's spinach pesto, but good quality store bought would work well too.
*A good tip to create a drizzle with a big bottle of olive oil, is to put your finger over the top as you run the bottle across the bread.

Kid Tip:
I sugget cutting the tomatoes smaller or leaving them off for your little ones. Also, add a sprinkle of parmesan to the top--that works wonders with my little guys. And..you can always call this, "special pizza!"
