Well, I have no picture to share with you, because we scarfed this down way too fast...
It was good.--And super easy to boot. Even my four year old loved "the chicken." I promise to re-make my Pan Seared Pork With Pomegranate Red Wine Sauce and to take another picture, but I wanted to share it right away since the pomegranate makes it so festive.
Here's What You Need:
3-4 boneless center cut pork chops
1/2 cup of pomegranate seeds*
Juice of one mandarin orange or 1/2 a large orange
1 TBS honey
1/3 cup of red wine
Extra virgin olive oil
S+P
Here's What You Do:
Season the pork with salt and pepper. Heat about 1 TBS of extra virgin olive oil over medium high heat, until the pan is very hot. Pan sear the pork about 7 minutes per side. Meanwhile, mix the pomegranates, honey, and the orange juice in the blender until smooth. Heat in a small sauce pan over medium. Stir in the red wine and bring to a boil. Simmer down for about five minutes. Pour over the pork or add the pork to the sauce pan to cover. Add additional salt and pepper to taste.

* I love getting the pre-cut pomegranate seeds (apparently called arils!) from POM to save time.
Kid Tip:
Who needs to know this is pork with pomengrantes? Not my kiddos. Chicken it was :) Success! If you are worried about the wine, don't be. The alcohol cooks out when you bring it to a boil, but leaves the great, rich flavor.
