Breakfast is the most important meal of the day. Breakfast is also the craziest frickin' time of the day. Sorry for my angst, but I don't know why on earth it takes me 1.5 hours to get out of the house in the morning and it takes Andy 15 minutes. It could be my 25 minute, my perpetual insistence that the boys brush their teeth or the fact that I succomb to their 7am whims, but this is all speculation. You would think that in 1.5 hours I would surely have eaten breakfast, but nope. I typically eat a granola bar sitting at my desk. So, on the occassions that Andy whisks the boys out of the house to drive them to school or on the weekends, I love to have a great breakfast with a big cup of coffee. My Breakfast Sandwich is definitely one of my favorites....
Here's What You Need:
1 egg
Handful of baby spinach
1 tsp dijon
1 tsp hot sauce
1 piece of Canadian bacon
1 whole grain or whole wheat English muffin
1/2 piece of sharp cheddar cheese

Here's What You Do:
Cook the egg according to your taste. I like to make it sunnyside up and then fold it over at the end of cooking. It works well to heat the Canadian bacon at the same time as you cook the egg as they only take a minute or two to warm through. Sprinkle the cooked egg with salt and pepper. Toast the English muffin. Mix the dijon and hot sauce (Feel free to adjust the ratio according to your taste.) Spread the mix on one side of the English muffin. Top with the spinach, canadian bacon, egg and then cheese... Enjoy!
Kid Tip:
Kids are not typically fans of over easy eggs, so you can easily make this with a scrambled egg. Scramble the spinach right into the egg and leave out the hot sauce.
