Skinnier (And Easier!) Chicken Parmesan

Have I told you before about the chicken parmesan joke in our family? Mom mom makes chicken parmesan at 8/10 events at her house. Even though we tease her, I think we are all a bit crestfallen when we arrive at her house to find a different menu. What is not to love about all things chicken parmesan? I came up with this Skinnier (And Easier!) Chicken Parmesan that is made in the skillet, so it's easy enough for a weeknight. I just may have to invite my mom for dinner...

Here's What You Need:
3-4 Chicken breasts, pounded to 1/2"
160z All natural marinara (I love Wolfgang Pucks)
Seasoning (Your choice, but I like fennel, Italian seasoning, red pepper flakes and extra basil)
1/4 cup grated parmesan
3oz fresh mozarella
14.5oz diced tomatoes, drained
Baby spinach (Couple of handfuls)
Salt + Pepper

Here's What You Do:
Preheat the oven to broil. Heat a pan with high sides over  high and add the marinara and the diced tomatoes. Generouslly add your favorite seasonings and then add the pounded chicken, tossing to coat. Bring to a boil and then lower temperature to medium high and cover. Simmer for 15 minutes. Top with the parmesan followed by the mozzarella. Broil, turning once, for about 3 minutes or until the cheese starts to melt and become golden. Top with an additional dash of seasoning and salt and pepper. Move the chicken to a plate and then stir the spinach into the suace until it "melts" in. Pour the sauce over the chicken.


Kid Tip:

I made a side of whole grain penne that I tossed with some of the sauce and then cut the chicken up in small pieces on the side. Success!
