Okay, so I actually made this for dinner. And then I had it the next day for lunch. I have actually failed to make it for breakfast, but since it has breakfast components, I am calling this creation Awesome Breakfast Quesadilla. I am sure I will be making it for breakfast because I know Andy will love it. I made it when he was out of town for myself while my boys were eating mac n' cheese and broccoli. You can easily double it to make enough for your whole fam and even breakfast guests.
Here's What You Need: (For 1)
1 whole wheat tortilla
1 tsp extra virgin olive oil
Taco seasoning (I love Penzeys)
1 small tomato, diced
1 egg whisked with skim milk
Handful of baby spinach cut into strips
1 TBS (max) of low-fat Mexican blend cheese
1 TBS of guacamole*
Hot sauce (optional) I like Tapatio
Here's What You Do:
Preheat the oil in a non-stick over medium to medium high. Add the tomato and season with the taco seasoning for about a minute. Pour in the eggs and start to scramble them. Add in the spinach and the cheese. Fill one side of a tortilla with the egg mixture and spread the guacamole on the other side. Fold in half. You can make it like a traditional quesadilla on a skillet or grill pan coated with non-stick for about 5 minutes turning once or in the pre-heated panini maker for 5 minutes. Serve with hot sauce.
Kid Tip:
What a great way to get the kids to eat veggies and protein! You can even make a dipping sauce by combining a dash of taco seasoning with plain yogurt.
