Easy Weeknight Dinner--in a bun!

I am originally from the Chicago suburbs, which perhaps explains my love of Italian sub anything, especially sausages and Italian beef. Unfortunately these things are not Skinny, so I pretty much stay clear of them except on special occassions. I came up with these Guilt Free Italian Sausage Subs, as they were super easy to throw together after a long day at work and they were reminiscent of my favorite sausage sandwiches.

Here's What You Need:
4 flavored chicken sausages (preferably organic)
2 cups sliced mixed peppers
1 capful of extra virgin olive oil
2 cloves of garlic, diced
2 cups all natural marinara
Handful of chopped baby spinach
Whole wheat hoagie buns

Here's What You Do:
Preheat oven to 400. Heat oil over medium high heat and then add garlic and peppers. Saute until soft, approximately 8 minutes.  Add marinara and chicken sausages to the pan and continue simmering for 10-15 minutes. Put sliced buns on a cooking sheet and bake for about 8 minutes. Using tongs add the chicken sausage to the buns and top with a big spoonful of marinara and peppers, followed by a handful of baby spinach. Have a napkin handy!


Kid Tip:
If your kids are a bit older, simply cut the buns in half. These are close enough to hot dogs that they should not be a big sell. For younger kids: Toss the marinara and chopped sausages  with whole grain cooked penne. The next day I had the pasta for lunch with a big handful of feta-yum!
