Greek Chicken in a Pita

In high school my friends and I frequented a restaurant in the Village of Wauwatosa (The Chancery). One of my favorite things on their old menu was Greek Chicken in a Pita. This is my version (less the fabulous waffle fries).

Here's What You Need:
3-4 grilled chicken breasts (marinate in olive oil and Greek seasoning)
Cucumber, sliced

Kalamata olives (buy the pitted kind)
40z feta, traditional
Red onion, sliced

6oz plain Greek yogurt
Big pinch of dill or mint

Salt and pepper
Greek style pitas
Olive oil
1/2 tsp minced garlic

1/2 cup flavored feta, crumbled
Roma tomato, chopped
Spring greens or argula


Here's What You Do:Preheat oven to 400. Brush pitas with olive oil and season with Greek seasoning. Bake for about 8-10 minutes until golden in a food processor or good blender and pulse the yogurt, garlic, dill or mint, as well as flavored feta until smooth. Slice the grilled chicken and add to the pitas. Top each pita with a handful of lettuce, tomato, cucumbers, olives, onions, and chunks of feta. Drizzle with yogurt sauce and season with salt and pepper.

Kid Tip:
You can wrap the ingredients into a traditional wrap to make it easier for them to eat, or you can have your children eat this as finger food. Cut the pita into triangles and give your children the pitas and the sliced chicken and cucumbers (and any other veggies they will eat) to dip into the yogurt sauce.
