The first real meal I evere made was a three course Indian dinner. My mom and even the guy at the Indian grocery store tried to convince me that Indian food may not be the best way to test my cooking abilities. Of course, I went ahead and made the meal for a dinner party! This really set the precedent for how I like cook... All sorts of crazy things and not a lot of the basics. As I have had a family I have had to change that a bit. This recipe is pretty much a testament to that!
The other night I was planning on making roasted potatoes, but I got home late from work and did not have 45-60 minutes to waste waiting for potatoes to roast. So, imagine my delight when I saw on the bag of red potatoes that you could microwave them. Aha! I put the potatoes whole in the microwave, covered, and after 10 minutes they were ready and perfect for smashing into the Aha! Moment Side of Smashed Potatoes With Broccoli Florets.
Here's What You Need:
Cup of broccoli florets (Boil fresh broccoli for 2-3 minutes, drain and set aside)
5-6 baby red potatoes (See note above how to cook)
Flavored light cream cheese (About 1 TBS)
Plain yogurt (About 2 TBS)
Best Life Buttery Spread (Max. of 1 TBS)
Sea salt and pepper
1 TBS skim milk
Here's What Do:
Microwave potatoes whole--not pierced, covered for approximately 10 minutes. Smash and stir in broccoli, cream cheese, yogurt, ham, Best Life spread, and milk. Season liberally with salt and pepper.
Kid Tip:
Feel free to alter the ingredients to your kids' tastes. The next day I made this with chopped deli ham and baby spinach. Who doesn't love mashed potatoes?!
