My husband has been going fishing in Canada with his best friend since they were nine years old. Not only is the trip a wonderful tradition between great friends, but it allows us to eat a lot of fresh Canadian Walleye! Andy likes to fry it with a ridiculous amount of oil and breading, which tastes great, but I won't stay skinny for long eating it that way. So, for the past few years we have experimented with making it on the grill using cedar planks. The cedar flavoring is subtle enough for the fish to shine, but definitely adds a complexity too. Grilled Cedar Plank Walleye is great for a hot summer day! (This is for two adults, but can easily be doubled, tripled, etc. to serve a bigger group.)
Here's What You Need:
2 walleye* fillets
1 large or two small cedar planks
Extra virgin olive oil
Seasoning (I like Sunny Paris by Penzeys, but you can really experiment with any seasoning you like)
Lemon
Tartar*
Here's What You Do:
Soak planks in water for 1-4 hours. Brush fish with olive oil and season liberally on both sides and set onto planks. Grill over medium heat for approximately 20 minutes. Stand by with a water bottle, watching carefully in case the plank catches fire! Squeeze with lemon and season with salt and pepper. Serve with homemade tartar and lemon slices.
*Feel free to substitute another whitefish.
*My homemade tartar is simple: 3/4 light mayo with 2 dill pickles, diced. Squeeze in 3/4 a lemon and season liberally with a citrus based seasoning.
Kid Tip:
Okay, so my kids wouldn't eat this one. But, I think I went about it all wrong. I simply put a piece of fish on my sons plate thinking he would be excited that his dad caught it. Not so much. Next time, I would cut the fish into small pieces to stir into the veggie rice. And hey--sometimes, I think it is okay to have an adult only dinner once in a while!
