Spicy Roast Chickpeas

I like having "protein" ready to go in the fridge to make meals less work (grilled chicken, black beans, chickpeas). I decided to roast the chickpeas to give them a more complex flavor. It worked! They are good on their own, but they are perfect for throwing into pasta or onto a big salad like I did below. Here's my version of Spicy Roast Chickpeas:

Here's What You Need:
14oz organic chickpeas (rinsed and drained)
1.5 capfuls of extra virgin olive oil
2 tsp seasoning (I like
Turkish seasoning from Penzeys)
Lemon


Here's What You Do:
Preheat the oven to 350. Toss the chickpeas with the seasoning and olive oil. Line a baking sheet with parchment and spread out the chickpeas. Roast tossing occassionally for 25 minutes. Add a big squeeze of lemon and toss. Ready to go!

Kid Tip:You can easily throw this into pasta for kids or give it to them for a snack. If you do, however, you may want to switch to a less spicy seasoning.
