There's something incredibly gratifying about seeing my family love a meal so much that they are fighting over every last bit. I have made this combination three times and that has been the case each time--even with the green beans! I told my husband that if I was selling recipes this one would come with a money back guarantee. I got the idea for the ravioli from a Cooking Light recipe. I changed it up to make it more "finger food" as I knew my kids would really love that concept. I have been making these green beans forever. Roasting beans with salt and olive oil does something magical to them. So, here you go- 100% Satifisfaction Guarantee Toasted Ravioli with Green Bean Fries:
Here's What You Need:
1 cup tomatoes chopped
extra virgin olive oil
Italian seasoning (I like Penzeys)
1/2 cup breadcrumbs
1 egg whisked with 1 TBS of water
9oz fresh ravioli (Like Four Cheese by Buitoni)
1 lb green beans, trimmed
12oz of pizza sauce
1 TBS of basil
Sea salt and peper
Here's What You Do:
Preheat oven to 450. Toss green beans with 2 capfuls of extra virgin olive oil and toss with salt and pepper and add to a rimmeded baking sheet. In a separate dish add the tomatoes with 2 capfuls of olive oil and seasoning (like Italian). Roast both for 15-17 minutes, turning occassionally. Add the pizza sauce into a small pan and warm over medium. While these the tomatoes and beans are roasting, set up your toasting station. Toss the breadcrumbs with 1/2 tsp of Italian seasoning and salt and pepper and add to one plate. Add the egg with water to another big dish. Heat 1.5-2 capfuls of olive oil to a wide pan over medium high heat. Allow the pan to get really hot. Then divide the ravioli into three batches. Take a handful of the ravioli and dip it first in the eggs and then into the bread crumbs to cover. Add to the pan and cook for 1-2 minutes per side. Stir the roasted tomatoes into the pizza sauce and top with the basil. Set the ravioli on a dish with the sauce in the middle so that the whole family digs in. Serve the green beans on a separate dish. Finger food!
