Chardonnay Marinated Feta Spread

It's officially party season! I love having new things for friends to try, so I was excited about this recent appetizer. My husband and I went on a "real date" to Flemings last month and they had this spread that we both loved. When we asked the waitress what it was, she said that it was Chardonnay marinated feta. So, of course I am came home and tried to recreate it. Here's my take on Chardonnay Marinated Feta Spread.

Here's What You Need:
80z if traditional feta, chopped
3/4 cup of Chardonnay
80z neufachatel cheese (or reduced fat cream cheese)
1 tsp (or more) of seasoning (I like Country French Vinaigrette or Herbs de Provence from Penzeys)


Here's What You Do:
Marinate feta in the Chardonnay. I recommend doing this first thing in the  morning so that the flavors really seep in. Scoop out the feta, saving 2 TBS of the Chardonnay. Mix feta, 2 TBS of Chardonnay,  neufachatel, and seasoning in a food processor. Serve with water crackers.

Kid Tip:
This is pretty much a no kids recipe because of the Chardonnay, so put the kiddos to sleep and then enjoy this with friends! (Or...you can save some of the feta prior to marinating it and mix it with a tiny bit of cream cheese and then add a kid friendly seasoning like Pizza, for example.)
