I don't know about you, but in the summer we are either hosting or going to a BBQ almost every weekend. As much as I love brats and chips, I would be writing a Chubby Mommy blog if I ate them all the time! ;) So, I like to have a lighter option as well. I came up with this Greek Pasta Salad and few years ago and it has pretty much become my go to for BBQs. I recently made it for a friends party and accidentally left it at home-much to my husbands delight! I hope you like it as much as we do.
Here's What You Need:
10oz of Wacky Mac Veggie Shapes pasta
1-1.5 cups of tomatoes, chopped
1 cup sliced peperoncini
40z flavored feta
6oz black olives
Italian dressing
Salt and pepper
Here's What You Do:
Cook pasta according to the package directions and then pour into a big pasta bowl. Add in all the ingredients and toss with Italian dressing* (be generous!). It really is that easy...
Kid Tip:
My kids tend to prefer warm pasta, so you can set aside a small portion and microwave it. Top with parmesan and you are ready to go!
*Notes: You can choose light dressing to save on calories. Be sure to add dressing right before serving or the dressing gets soaked into the noodles and it becomes dry. Be sure to make extra for yourself-it gets better each day!
