Dinner in Ten! Chicken Scallopini with Honey Mustard Cream Sauce

Sometimes I think that dinner time=melt down time at our house. So.. more and more I think it is critical as a busy mom to have 10 minute dinners in your repertoire. I don't have many... (Probably because I collected a lot of recipes in my pre-kid days!) Most of my SM recipes are fast, but not this fast.Chicken Scallopini with Honey Mustard Cream Sauce truly takes only ten minutes of cooking time. What's not to like about that?!

Here's What You Need:
1lb Chicken scallopini (thin sliced chicken breast)
3/4 cup honey mustard

3/4-1 cup fat free half and half
salt and pepper
Handful of baby spinach cut into strips.

Sliver of butter and extra virgin olive oil

Here's What You Do:
Heat oil and butter over medium high. Season both sides of the chicken with salt and pepper and saute in two batches for 2-3 minutes per side. Set aside, keeping warm. Whisk together half and half and mustard and warm through over medium/low heat. Add a handful of baby spinach the last minute. Season liberally with salt and pepper. Pour over the chicken and serve. I served this with rice to scoop up all the good sauce.


Kid Tip:
This is pretty sweet, so hopefully your kids will like it! You can try and cut everything small and give it to them "as is". You can also separate the chicken and cut it into small bites and then spoon the sauce over rice.
