Especially for your kids...Ravioli with Broccoli Cream Sauce

My kids literally come home from daycare starving, so even if I have a family dinner planned I sometimes make them something first while we are waiting for my husband to get home from work. After many BBQs (This equals eating a ton of junk food!) I couldn't bare making them mac n' cheese or hot dogs, but I also didn't want to make something complicated knowing I was making a meal later. So...I came up with this no cook sauce and Ravioli with Broccoli Cream Sauce was born. Both boys asked for seconds. Woo woo!

Here's What You Need:
Whole wheat ravioli (like Buitoni)
2 1/2 cups part-skim ricotta
1/4 tsp nutmeg

1/8 tsp paprika
1/2 tsp salt
1/4 cup parmesan
big handful of broccoli florets
pepper to season


Here's What You Do:
Cook the pasta according to the package directions, adding the broccoli florets the last two minutes. Drain, saving 1/4-1/2 cup pasta water.Set aside the pasta and broccoli in a large pasta bowl. In a food processor mix the remaining ingredients until well blended. Add the pasta water to get the consistency you prefer. Mix the sauce into the broccoli and ravioli. Top with a little pepper to taste and pass with extra parmesan.


Kid Tip:
Especially for kids, so no tip needed! I will say that both my husband I liked this as well-he even ate the left overs the  next day.  I would probably add more salt and pepper if I was making it for myself.
