Sopa de elote y limon (Roasted Corn and Lime Soup)

I spent my junior year of college living in Mexico. I can't think of a better place to spend 21! I loved everything about it-including the food. So much so that I could only wear my elastic waist pants by the time I left. My friend Tiffany and I would walk down the dusty streets of Cholula to our favorite neighborhood restaurant, Fonda Cristy. They had a great comida corrida, which is a set lunch. Typically meat, rice, soup and of course bread with fresh salsas. I always loved their soups-very simple but fresh tasting from all the cilantro and lime. This Roasted Corn and Lime Soup is an ode to Cholula (And a great way to use farmer's market veggies!).

Here's What You Need:
Corn from two husks*
1tsp taco seasoning (I like Penzey's Bold Taco seasoning)
Extra virgin olive oil (about a capful)
2/3 cup white onion, chopped roughly
2 large zuchini, chopped
40oz organic chicken broth
14.5oz fire roasted tomatoes, undrained (I like Muir Glen)
Juice from a big lime
Handful of cilantro, chopped finel
Avacado, chopped (optional)


Here's What You Do:
Preheat oven to 450. Toss corn with olive oil and taco seasoning and put onto a baking sheet lined with parchment or foil. Roast for about 15 minutes, turning once. Pour the broth, tomatoes and their juices into a large pot and bring to a boil. Lower the heat so it comes to a low boil and add all the ingredients up to cilantro and simmer for about 15-20 minutes. Stir in the cilantro. Ladle into bowls and top with avocado and a dash of pepper.


*Hold the corn upright and run a knife along the side to take off the kernels. If fresh corn is not available then feel free to replace thawed frozen corn, about 1.5 cups.

Kid Tip:
I have a couple of thoughts here. Try giving this "special soup" to your kids with whole wheat of veggie tortilla chips to dip into it to make it more fun. My son loves nachos, so for him I would scoop out the veggies and add it to tortilla chips topped with cheese and microwave to make his favorite "chips with cheese" loaded with fresh veggies!
