Apricot Curry Grilled Chicken

I lived in South Korea for 10 months when I was 25. It was there that I fell in love with creating recipes. (Perhaps more out of desperation than anything else.) I was seriously homesick for all things American and so I would go to the local grocery store and pick up anything I recognized. I would then stand over my two burner stovetop and try to recreate foods I loved and also came up with some funny combinations too. (Corn flake and orange crusted chicken for example...)

Yet, when I came home and the grocery store aisles beckoned with more than my heart could ever desire and my cooking magazines piled up, I stopped making up my own recipes and started cooking other peoples'. Until Skinny Mommy. I have not been so excited about something in a long time. Recipes literally come to me in my dreams. Including this one-Apricot Curry Grilled Chicken (But in my dream it was mango. I just couldn't find mango chutney at the grocery store, so the dream was altered!) This marinade is seriously good. I am already thinking of other things to make with it...


Here's What You Need:1-2lbs of chicken (I used drumsticks that I trimmed most of the skin from)
1 cup ff plain yogurt
1/2 cup apricot preserves*
1TBS sweet curry powder


Here's What You Do:Stir together the yogurt and apricot preserves, adding in the curry. Pour the marinade into a big zip lock bag along with the chicken. Let marinate overnight. Grill over medium until done. Woila!

Kid Tip:The last time I made drumsticks my three year old, Brady, loved them. So, I picked out  the drumsticks just for him and then he woudn't eat it off the bone. Geez. So, we cut little pieces for him. I think next time I will try this with chicken wings.

  1. Am absolutely loving ur blog and your fabulous recipes! this grilled chicken sounds so good... even though good apricot preserves are not easy to find here in India, mango chutney is available in plenty :) so i think i may just be able to recreate the dish of your dreams :D
