We have had a gloriously hot July in Wisconsin-just the way I like it! But last week there was a drizzly, cooler day and I just felt like soup. My work has been insane lately so making a 100% homemade soup was out of the question. So...I came up with this Semi-homemade 5 Minute Creamy Butternut Squash Soup over my lunch hour. Yum and embarassingly easy. (This makes 2 bowls so adjust accordingly. Okay, I ate them both myself!)
Here's What You Need:2 cups of good quality butternut squash pasta sauce*
1 cup fat free half and half
Dash of cinnamon
Pepper
Handful of baby spinach cut into strips
Here's What You Do:Heat the sauce and dash of cinnamon over medium low adding in the half and half, stirring until warm. Throw in a big handful of spinach and stir gently until blended in. Top with a generous amount pepper and you have yourself the quickest soup ever!

Kid Tip:My kids were not home to try this one, but if they were I don't know if it would be too hard of a sell. The soup was actually very sweet and if I gave them something to dunk I know they would at least try it. Who doesn't like to dunk crackers or bread into soup?!
