If there's one thing I love about summer it's grilling. I honestly have never grilled anything (Isn't that ridiculous?!), but when we grill it's the one time my husband and I cook together. I get everything all ready and he mans the grill-. (Makes my dinner experience way less chaotic)
I came up with these Chipotle Honey Grilled Pork Chops a couple of years ago and love to bring them back each summer as they are so easy--perfect for a busy weeknight.
Here's What You Need:
1lb boneless pork chops
5 TBS chiles in chipotle (sauce)*
1 TBS honey
Sea salt
Here's What You Do:
Put the pork chops in a big ziplock bag and add the other ingredients. Marinade over night and then grill over medium until done. Yep--It's that easy!
*Find these near the Mexican groceries. This ratio makes for a pretty spicy chop! So, if you prefer something milder add another TBS of honey and drop one or two TBS of the chipotles.
Kid Tip:
Because of the spicy factor of these, I suggest putting your kids' chops in a separate bag and simply marinating them in honey and sea salt. If your kids don't like "meat" you can cut the chops up and toss small bites with rice.
