Cinnamon Raisin Croutons Make Any Salad Extra Special!

I have heard so many people say that they were nervous about having their second children-worried they wouldn't have that special, alone with their first one anymore. In the chaos of a newborn that proved to be pretty true at our house when we really had to divi up the duties. However, now I love taking time to just spend with my three year old. I put the "baby" to sleep and he and I play games,  put together puzzles, and huddle in the kitchen creating all sorts of  things. These amazing Cinnamon Raisin Croutons were created the other night by the two of us. They will make even the simplest of salads special. I am going to be bringing this one to Thanksgiving this year...

Here's What You Need:
2 cups of raisin bread, chopped (preferably a whole grain loaf, unsliced)
2 TBS Extra Virgin Olive Oil
1tsp cinnamon
1 TBS honey
1/4 tsp salt

Here's What You Do:
Preheat the oven to 400. Whisk together all the ingredients but the bread. Toss in the bread and be sure to coat each piece well. Spread out onto a baking sheet and bake, turning occassionally, for about 10 minutes.

Salad:
I used spring greens, a chopped apple, and glazed nuts. I then made an easy dressing with olive oil and balsamic with a good shake of seat salt and pepper. It would also be good with grapes, pecans, or pretty much anything you have on hand--the stars of the show are the croutons!

Kid Tip:My kids are still not fans of salads, but they sure loved these croutons and the apples. Good enough for me :)
