I sometimes feel so disconnected from the girl I was in college-I dated long-haired musicians, wrote poetry, painted pictures, and traveled without fear, backbacking in Mexico and Central America. Art was one of my many majors during this time. Sadly, I put the paintbrush down shortly after joining corporate America, but I like to think I still have that "artist" somewhere inside of me. Creating recipes has been such a wonderful, creative outlet for me. I cannot believe how many original recipes I have come up with over these past months of working on this blog-the creative juices have been flowing! I had a vision of combining blackberry preserves and balsamic vinegar into a type of BBQ sauce and it worked great here for Blackberry Balsamic Roast Chicken. It would probably be even more amazing on grilled chicken, but I didn't want to make my husband stand in the rain. Enjoy!
Here's What You Need:
1.5-2lbs chicken (I used thighs)
1/2 cup blackberry preserves
1/4 cup balsamic (or less if you don't like the strong flavor)
1tsp of minced garlic
Extra virgin olive oil
1/2 tsp salt
Here's What You Do:Preheat the oven to 400. Add the chicken, extra virgin olive oil and salt and pepper to a large bag. Marinate for at least 15 minutes or as long as overnight. Mix together the preserves, balsamic, garlic and TBS of olive oil along with the salt into a small bowl. Keep stirring until a smooth consistency forms. If you have a roasting pan, I suggest using it, setting the chicken on the rack. Cover the chicken lightly with foil and bake for 25 minutes. Take out the chicken and brush it generously with the BBQ sauce and put it back in the oven. Bake for an additional 20 minutes or until cooked. **Be sure to baste the chicken with the BBQ sauce about every five minutes, during the last 20 minutes, turning at least one time.
Kid Tip:
My three year old asked for seconds of the chicken, which is always a good sign. I simply cut the chicken into little pieces for him.
