Delicioso! Salsa Verde

Rick Bayless has this fabulous salsa verde that is made with roasted garlic and jalapenos along with fresh tomatillos. It is really good, but super spicy. (This is coming from a girl that eats a jalapeno with every bite of her Mexican food!) I decided to make my own version, which I am calling Delicioso! Salsa Verde. It's way easier to make and not a bit spicy. We put it over grilled chicken, but it would be great with grilled shrimp, grilled veggies, on quesadillas, tacos, scrambled eggs, etc. This salsa is so fresh tasting-we loved it! I was all set to pack up the left overs when I saw my husband had scooped up every last bit with a handful of tortilla chips.Better get the food processor out to make some more...

BTW--
My picture is really bad because the crappola was hitting the fan as I was outside hunting down the last bits of sunlight for this picture. Everyone was starving after an afternoon at the pumpkin patch and of course, annoyed that I was snapping pictures. Imagine kids whining and my husband pleading for my return... I guess I can't blame them ;).


Here's What You Need:
6-8 tomatillos, husked and quartered
1/2 tsp salt
1 TBS agave syrup (You can sub honey)
Warm water*


Here's What You Do:Put everything  up to water into the food processor and pulse to make a salsa consistency. Add 1 TBS of warm water and up to 1/8 cup depending on how you like your salsa. That's it...Provecho!

Kid Tip:
Since this is not spicy your kids will probably really like it. I do recommend serving it on the side, as dipping things is so much more fun for kids.
