This Skinny BLT is less than 12 grams of fat and loaded with vitamins and fiber...

I just got back from teaching three middle school Spanish classes. It was my first time formally teaching in seven years, and wow!- I am wiped out. I commend full time teachers for all the effort it takes to prep for the class and just the nature of being 100% "on" the entire time. ( BTW-I am the crazy Spanish teacher running around with maracas chanting ole, ole ole!) I quick whipped up this Skinny BLT after class.  Normally BLTs are made on nutrient lacking white bread, with useless iceberg lettuce and piled high to the sky with bacon. Here I swapped iceberg for spinach, white for whole grain bread, and two pieces of bacon did the trick.  My Skinny BLT is less than 12 grams of fat and loaded with vitamins and fiber. It was really good too, especially since I ate it in the sunshine  before heading back to my office and the sixty new emails waiting in my inbox...

Here's What You Need: (For 1)
Two pieces of hearty whole grain bread, toasted

2 tsp of low-fat mayo
2 pieces of bacon*, cut into 2" pieces
1/2 a ripe tomato, cut into slices and seasoned with salt and pepper
Handful of baby spinch, cut into pieces


Here's What You Do:
Cook the two pieces of bacon and drain. Add the mayo to the toasted bread and top with the tomatoes, bacon, and spinach. Add salt and pepper. Perfect lunch!

*I do know that turkey bacon is less fattening, but I don't think it tastes as good as the 'real thing'. Also, I couldn't find turkey bacon that was nitrate free and that was more impt. to me than the fat grams.


Kid Tip:

I made this when my kids were not home, but if I was making it for the whole family, I would simply leave off the tomatoes (since my little guys don't like them) and add a piece of cheese and make this more "grilled cheese style".  I would definitely keep the spinach on the sandwich. Serving it as a warm sandwich will help make the spinach a little bit more discreet!
