Skinny Taco Dip

                             
I don't know what is wrong with me, but I think I was born without the sports fan gene. Even back in high school my fellow cheerleaders would have to give me the heads up when the football team switched from offense to defense. (I know I am painting myself as a ditz, but I really am a successful business owner with half a brain, just not a sport minded one!!)
Anyway, this time of year, I wish I was a sports fan--especially here in Wisconsin. The leaves are the most gorgeous array of colors, the sky is bright blue, and sports mania is in the air whether it is blue, green and gold, or bright red--it is evident all around  me. Pretty much all the Wisconsin sports are rocking right now. So... despite my lack of knowledge, I can't help but be excited for everyone else who is fantastically smitten right now with the Brewers, the Packers and the Badgers. I made this Skinny Taco Dip just for you sports fans--to have a skinny game day party. Goooo Wisconsin!

Here's What You Need:


14oz fat free refriend beans
160z ff sour cream
2 TBS Taco Seasoning (I like Penzey's Bold Taco Seasoning)
Baby spinach cut into strips (About a handful)
1 tomato, chopped
1/2 avocado, chopped
Diced olives  (1-2 TBS)
Cilantro, chopped finely (About a handful)
1-2 TBS of shredded cheese

Whole Grain or Wheat tortilla chips

Here's What You Do:

Spread out beans onto a large platter. Mix sour cream with taco seasoning and add to the top of the beans. Top with all the other ingredients through cheese. Serve with the chips.

Kid Tip:
My kids love anything they can dip. It makes for sour cream handprints everywhere, but no harm done, right?! If I was making this without kids in mind I would add a hint of spice like jalepenos for example.
