Breakfast Flatbread

It usually takes me over an hour to pay the bills for my company, so I try to make it as enjoyable as possible. I sit down in front of the Today Show with a big cup of coffee and in my pjs and get to it. This morning, I treated myself to my latest concoction-Breakfast Flatbread. I am pretty sure I would be happy eating this for breakfast, lunch, and dinner!

Here's What You Need:
1 piece of flatbread (I use Archer Farmers Garlic Naan from Target)

1 tsp of extra virgin olive oil
1/4 tsp of minced garlic
1 ripe cherry or roma tomato, sliced and seasoned with salt and pepper
Handful of baby spinach cut into strips*
Seasoning (I like Penzey's Country French Vinaigrette)
1 scrambled egg (made with organic non-stick and skim milk)
1 TBS of shredded cheddar

1-2 pieces of lean deli ham, chopped
Black pepper and salt (optional)


Here's What You Do:
Preheat the oven to 400. Make the scrambled egg and break into little pieces. Mix the garlic and olive oil and spread on to the flatbread. Top with the ham, followed by the egg, tomato, and then the cheese. Season liberally. Bake for 4 minutes. Turn on broil (no need to take it out of the oven or wait until it heats up all the way) Broil for 2 minutes, turning once. Sprinkle with the spinach and serve.


*Wrap the spinach into a ball and then use a kitchen schears to cut it into strips.

Kid Tip:

Breakfast pizza! That is one way to make breakfast fun. You can vary the ingredients to your kids particular tastes.

  4. Perfect breakfast but also perfect for any lunch or dinner with a nice salad. I love the flavors on this and how yummy but healthy!
