Cashew Cranberry Curry Spread

Many moons ago my Aunt Noel told me how she and her sister tried to outdo eachother with fabulous appetizers. She shared a couple of them with me. I have since tweaked one of them to make it skinnier and also to include cranberries, as this Cashew Cranberry Curry Spread has become my "go to" appetizer for Thanksgiving. It is so good--Thanks for the inspiration Noel!

Here's What You Need:
4oz fat free cream cheese
40z of low fat cream cheese2 TBS of fat free plain yogurt
2 TBS of sweet curry powder
1/2 cup of scallions, chopped
1/2 cup of dried cranberries (or craisins)


Here's What You Do:
Stir everything together and serve with crackers. These are good with Low Fat Wheat Thins. You may want to have some extra cashews, scallions, and cranberries to put on top right before you serve it.) If you make this ahead of time, I also suggest stirring in an extra TBS of yogurt right before serving to  make it smooth and creamy.


Kid Tip:
If you can get your kids to try this, I am sure they will like it-- It is sweet and crunchy too!
