(Skinnier) Fried Rice

Fried rice is to Chinese food what the burritto is to Mexican food---The safe bet. It's the thing that even your least adventerous friend will order. And yet, fried rice is really good.. and not too skinny. Panda Express' Veggie Fried Rice has 530 calories and 16 grams of fat--!!! My Skinnier Fried Rice is guilt free and tastes as good (if not better!) than takeout...

Here's What You Need:
2 cups cooked rice
1 piece Canadian bacon*, diced

1 egg*
1 cup carrots and peas, dethawed
4 TBS low sodium soy

2 TBS sesame oil
1 tsp siracha
1/2- 1 tsp of vegetable oil


Here's What You Do:
Mix together the soy, sesame and siracha and set aside. Cover the vegetables just slightly with water and microwave them for one minute. Drain the water. Heat oil in a wok over medium high and add the vegetables stirring for about a minute. Toss in the rice and stir another minute. Then break the egg right into the pan stirring constantly so it starts to scramble. Add in the sauce and stir to coat. Toss in the Canadia bacon and stir until everything is heated through. Serve with soy and siracha to pass.
*You can easily add another egg or a piece of Canadia bacon to this to amp up the protein or leave out the Canadia bacon to make it vegetarian.


Kid Tip:
My kids love rice, so this was not a hard sell. You can turn it into a really fun meal with a big bowl of edamame (that takes 3 minutes to cook!), a handful of mandarin oranges, and the awesome pan-seared Pot Stickers from Trader Joes. (Called Gyoza)

  1. I do this and substitute 1/2 of the rice with quinoa, DELICIOUS!! The kids don't even notice the difference.
