Perfect for a Picnic! PLT With Basil Mayo

My Aunt had us over for lunch a couple of months ago, and she had this wonderful spread of dips, salads, and proscuitto sandwiches. I loved the sandwiches so much-simple enough for a picnic and yet elegant enough to entertain with. This  is my version of the PLT with Basil Mayo. This is for just 1, but you can adjust it accordingly for a group.

Here's What You Need:
1tsp of basil, chopped
1-2tsps of light mayo
1 piece of prosciutto (or up to 2 pieces to keep it skinny!)
Vine tomatoes, sliced
Spring greens
Small fresh baguette


Here's What You Do:

Mix the mayo with the basil. Cut baguette and spread mayo onto both sides of the bread. Layer with the prosciutto, tomatoes, and then spring greens. Liberally season with salt and pepper. Enjoy with a glass of Me Time wine!

Kid Tip:
My kids love things they can hold onto. Wrap this in tinfoil at the bottom to make a "holder" and then help them peel it back as they eat. You can swap out the proscuitto for ham or turkey if they prefer that.
