Honey Butter Grilled Salmon

My husband went fishing with his co-workers last week on Lake Michigan and they caught nine coho salmon. He brought home three big filets-Nothing like fresh fish! Everyone he went fishing with swore up and down, however, that in order to keep the salmon from tasting fishy that you needed to use butter. I love butter probably more than the next girl, but in the spirit of "skinnyness" I used Good Life Spread (which I have come to love by the way). This Honey Butter Grilled Salmon turned out great, and what can beat a joint dinner effort? They sure don't happen often at our house!

Here's What You Need:
Large salmon filet (or 4- five small ones)*
1/4 cup
Best Life Spread
1/8 cup of low sodium soy sauce
1/4 cup honey
1 tsp minced garlic
Sea salt

Here's What You Do:
Whip the butter and honey together, adding the garlic. Spread generously over both sides of the salmon and sprinkle with sea salt. Put the salmon in a large ziplock along with the soy sauce. Marinade over night if possible, turning occassionally. Grill over medium heat, covered, for about 20 minutes (Be sure to check at 15 minutes). Try saving some of the marinade to brush on the salmon as it is grilling.

*This makes 4-5 servings.

Kid Tip:
I am not going to lie, salmon is a harder sell and if you are making wild salmon like this there are a lot of bones. So... It just may be a turkey hotdog night for them! Or, you can cut up the salmon after it is cooked paying careful attention to the bones, and add the pieces to pasta or orzo with their favorite sauce.
