(Skinnier) Queso Dip

When I was a kid Halloween was on Halloween. It didn't matter if it was a Monday we went trick or treating on Halloween-in the dark. I guess times have changed. (I sound old, don't I?) Anyway, the good thing about every town and neighborhood having Halloween on a different day and time is that it is kind of like the holiday that never ends. Last night we went to a Haunted Woods event (and three more costume events are to follow...) Our friends came over before, so  I whipped up this (Skinnier) Queso Dip to have as an appetizer. I don't typically use processed cheese, but let's face it, nothing melts better than Velveeta and queso dip is always the first to go at a party. This is my version....

Here's What You Need:

60z of Light Velveeta
10z ff cream cheese
4 TBS diced tomatoes

4 TBS juice from diced tomatoes
40z of diced green mild chiles (in the Mexican section)
Pepper
Cilantro (optional)


Here's What You Do:
Cut the cheese into blocks. Heat all the ingredients over low, stirring constantly until smooth. (About five minutes) Season with pepper and serve with cilantro on the top if you desire. You can easily make this ahead of time, just reheat for one minute in the microwave, stir, and then heat for an additional minute.Serve with whole grain tortilla chips.


Kid Tip:
My kids typically love anything with chips and dip, but they were so excited last night that they didn't even try this. I will serve it again this weekend and I am sure they will devour it! This is not very spicy, but if your kids are sensitive to spice you can dish them out a portion before adding the chiles.

  1. I love this dip and it looks delicious also like the lite velveeta. I like th regular one too, ha but lite is better.

  2. Oh your kids are sooo cute! I love that picture and this queso dip- a winner for sure- I love how you made it a skinnier version but with keeping with the flavor of it. I can't wait to try it
