Ridiculously Easy! Slow Cooked Pork With Chile Verde Sauce

Do you have the "Target problem"? Meaning, do you walk into Target with a list (diapers, paper towels, etc.) and walk out with a bunch of random stuff you never even knew you needed? (Think a book, a sweater, new mascara.) I know I do. I can never leave Target without spending $100 or more and coming out with at least a few random purchases. The Target by our house just got a food section, so of course I had to check it out. The Target brand, Archer Farms, had this Chile Verde Cooking Sauce, so I bought it. No clue what I was going to do with it. Well, last week week when my little one got strep throat and my three year old decided to go on a no sleeping campaign,  I desperately needed a slow cooker dinner. So I used the Target Chile Verde sauce and voila! Slow Cooked Pork With Chile Verde Sauce was born. I planned on putting it on tostadas, but the flavor was so good that I decided to simply serve it over rice instead.

Here's What You Need: (Serves 4)1lb boneless pork chops or pork tenderloin*
1 cup of Chile Verde Cooking Sauce (or any other great salsa verde!)
1 cup of Mexican beer (I used Dos XX)

Cilantro

Here's What You Do:Cut the pork into pieces and put in the slow cooker. Pour the beer and verde sauce over it and set the slow cooker on low. Cook for 6-8 hours. Break up the pork with a fork and then serve it over rice with a big handful of chopped cilantro.

*Feel free to sub in chicken or turkey here too.


Kid Tip:I mixed the pork into the rice and my three year old ate it all up. If your kids are more discerning, try making a tostada: (Preheat oven to 350 and put a layer of beans, the pork and then cheese and bak for about 10 minutes. Cut into chips)

  1. I had been waiting for this post since you mentioned it on my pulled pork post. Looks delicious. Also, reading other comments I just realized your name is Brita! That is my mom's name. I have only met one other person so far with that name, an elderly Swedish woman. I was told in Sweden it is an archaic Swedish name.
